- Olive Oil 1 Tbsp
- Onion 1
- Garlic Cloves 2
- Ground Ginger 1 Tsp
- Curry Powder 1 Tbsp
- Coconut Milk 1 can (14 oz)
- Diced Tomatoes 1 can (14.5 oz)
- Chickpeas 1 can (15 oz)
- Salt & pepper To Taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic and sauté for 2-3 minutes until the onion is translucent.
- Add the ginger and curry powder and sauté for another minute.
