Ingredients

  • Olive Oil                  1 Tbsp
  • Onion                     1
  • Garlic Cloves             2
  • Ground Ginger           1 Tsp
  • Curry Powder           1 Tbsp
  • Coconut Milk              1 can (14 oz)
  • Diced Tomatoes         1 can (14.5 oz)
  • Chickpeas                 1 can (15 oz)
  • Salt & pepper            To Taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic and sauté for 2-3 minutes until the onion is translucent.
  3. Add the ginger and curry powder and sauté for another minute.
  4. Add the coconut milk, diced tomatoes, and chickpeas.
