Ingredients

  • 1 block of firm tofu
  • 1/2 small onion, diced
  • 1/2 red bell pepper, diced
  • 1 clove garlic, minced
  • 1 tbsp nutritional yeast
  • 1/2 tsp turmeric
  • 1/4 tsp cumin
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley (optional)

Instructions

  1. Press the tofu to remove excess water. To do this, wrap the tofu block in a paper towel or clean dish towel and place it on a plate. Put a heavy object, such as a cast iron skillet or a can of beans, on top of the tofu and let it sit for about 10 minutes.
  2. While the tofu is being pressed, heat a skillet over medium heat with a tablespoon of olive oil. Add the diced onion, red bell pepper, and minced garlic to the skillet and sauté until the vegetables are tender, about 5 minutes.
  3. Crumble the pressed tofu into the skillet with the sautéed vegetables. Add the nutritional yeast, turmeric, cumin, salt, and pepper to the skillet and stir everything together until the spices are evenly distributed.
  4. Cook the tofu scramble for about 5-7 minutes, stirring occasionally, until the tofu is heated through and slightly crispy.
  5. Serve the tofu scramble hot, garnished with fresh parsley if desired.
