Ingredients

For Cauliflower Pizza Crust:
  • 1 med          Cauliflower
  • 1 cup           Shredded Mozzarella
  • 1                   Egg
  • 1 tsp            Dried Oregano
  • 1/2 tsp         Garlic Powder
  • To taste       Salt & Pepper

For Toppings:
  • Hummus
  • Cherry tomatoes, halved
  • Kalamata olives, sliced
  • Feta cheese, crumbled
  • Fresh basil leaves, torn

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rice the cauliflower using a food processor or grater. Microwave the riced cauliflower for 5 minutes, then let it cool. Squeeze out excess moisture from the cauliflower using a clean kitchen towel.
  3. In a bowl, combine the cauliflower, shredded mozzarella, egg, oregano, garlic powder, salt, and pepper. Mix until well combined.
  4. Line a baking sheet with parchment paper. Press the cauliflower mixture onto the parchment paper, shaping it into a round pizza crust. Bake the crust in the preheated oven for 15-20 minutes or until golden and firm.
  5. Once the crust is ready, spread a generous layer of hummus over the surface. Scatter cherry tomatoes, sliced olives, and crumbled feta evenly on top.
  6. Return the pizza to the oven for an additional 5-7 minutes or until the toppings are warmed through and garnish with fresh basil leaves, slice, and savor the Mediterranean flavors on this wholesome cauliflower crust.
