Ingredients
- 12 cups Popped Popcorn
- 1 cup Unsalted Butter
- 2 cups Brown Sugar
- 1/2 cup Light Corn Syrup
- 1 tsp Salt
- 1/2 tsp Baking Soda
- 1 tsp Vanilla Extract
- 3 cup Assorted candy
Instructions
- Preheat your oven to 250°F (120°C). Place the popped popcorn in a large mixing bowl and set aside.
- In a saucepan over medium heat, melt the butter. Stir in the brown sugar, corn syrup, and salt. Bring the mixture to a boil, stirring constantly. Allow it to boil without stirring for 4-5 minutes.
- Remove the saucepan from the heat and carefully stir in the baking soda and vanilla extract. The mixture will bubble up, so be cautious.
- Pour the hot caramel sauce over the popped popcorn in the mixing bowl, gently stirring to coat the popcorn evenly.
- Spread the caramel-coated popcorn onto two large baking sheets lined with parchment paper.
- Bake in the preheated oven for about 45-60 minutes, stirring every 15 minutes to ensure even coating.
- Remove from the oven and let the popcorn cool completely. It will harden as it cools. Break the popcorn into clusters and mix in your choice of candy.
