Vegan Lentil Soup

Ingredients

  • Olive Oil                          1 Tbsp
  • Ground Coriander               1 Tsp
  • Ground Cumin                   1 Tsp
  • Ground Cinnamon               1/2 Tsp
  • Smoked Paprika                1 Tsp
  • Turmeric                        1/2 Tsp
  • Diced Onion                     1
  • Diced Carrots                  2                
  • Diced Celery                    2 stalks
  • Diced Tomatoes                1 cup
  • Minced Garlic Cloves             3
  • Lentils                            1 cup
  • Bay Leaf                        1
  • Vegetable Broth                 4 cups
  • Salt & Pepper                  (To Taste)
  • Chopped Parsley               (To Garnish)


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes, until the onion is translucent.
  2. Add the carrots and celery and sauté for 5 minutes more, until the vegetables are slightly softened.
  3. Stir in the cumin, coriander, paprika, turmeric, and cinnamon and cook for 1-2 minutes, until fragrant.
  4. Add the lentils, vegetable broth, diced tomatoes (with their juice), and bay leaf. Bring to a boil, then reduce the heat and let simmer for 30-40 minutes, or until the lentils are tender.
  5. Remove the bay leaf and season the soup with salt and pepper to taste.
  6. Serve hot, garnished with chopped fresh parsley.
