Instructions
1. Preheat your oven to 375°F (190°C).2. Begin by preparing the chicken breasts. Carefully butterfly each breast by slicing it horizontally, but not all the way through. Open the breasts like a book, creating a larger, thinner piece of chicken.
3. Season the chicken cutlets with salt and pepper on both sides.
4. Take one slice of prosciutto and one slice of mozzarella cheese, and place them on top of a chicken cutlet. Fold the cutlet in half to enclose the prosciutto and cheese. Repeat this step for the remaining cutlets.
5. In three separate shallow dishes, prepare a breading station. Place flour in the first dish, beaten eggs in the second dish, and breadcrumbs mixed with grated Parmesan cheese in the third dish.
